The Toulouse sausage with lentils is made in the Languedoc area of France.

It makes a lovely quick meal to heat up either in a casserole for 10 minutes or for only 3 minutes in a microwave, once it has been decanted into a dish and covered with clingfilm.

It is in a sauce of onions, tomato and garlic with lardons of pork. The lentils make up 16 percent of the dish - the sausages 34 percent.It is a delicious combination and makes a filling meal with no trouble to the chef!
