This pesto is one of the most delicious I have encountered. It is made in the Ligurian region of Italy and contains a great amount of basil, pinenuts and olive oil.
Pesto is a lovely addition to artisan pasta, making a quick and really tasty meal in a quarter of an hour, with homemade tasting ingredients.
It can also be used in toasted sandwiches or on pizzas, to give extra flavour. One can add it to aubergine slices and put them under the grill with some mozzarella and the pesto to make a lovely healthy starter or vegetable!
Makes a good Xmas stocking present too!
